WHere is a simplified version of a cocktail found on a new menu. Designed as a party-sized pre-mixed that is packed with tastes of the holiday season, rendering it excellent for your festive gathering. Save the extra syrup you can use for morning drinks, sweets, or to mix another batch of this cocktail.
Bikini Recipe
Yields 10 people
Ingredients for the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Premix (produces 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
For the Citrus Syrup: Combine all the ingredients into a saucepan, heat until it reaches a light boil, agitating to dissolve. Next, take off the heat and let it to cool fully. Decant into a sterilised bottle, cap it keeping it in the fridge, where it will keep for up to four weeks.
For the Batch Mix: Mix all the liquid ingredients in a sizeable container, leave to sit for 60 minutes, then strain preferably using muslin, so it's completely strained.
When ready to serve: Pour 85ml of the batch mix into your stirring glass packed with ice, and agitate carefully for one minute to chill. Filter into a cold coupe glass or similar, garnish with a few cranberries and finish with a quick spritz of the essential oil over the top.
